Last night I had a craving for something sweet so I made these amazing brownie cupcakes. Here is the recipe...I added orange extract instead of the vanilla. Yummy!!

Brownie Cupcakes

4 squares of semi-sweet chocolate
2 sticks butter
Melt the above in a double boiler over low heat.
1 3/4 cup sugar
1 cup flour
Add 4 eggs, one at a time to the flour and sugar stirring as little as possible.
Add: 2 teaspoons vanilla, chocolate mixture and 1 cup of pecans to flour mixture.
Pour in muffin cups (about half full). Bake 25-30 minutes in a 350 oven.

Yield: 12-16

our minds were on the same wave length yesterday. i found a recipe for gluten free cream cheese brownies with orange butter cream frosting. i haven't made them yet.
