Homemade Date Night

 So we don't go out to eat much around here but we do try and do something once a week together out of the house even if it's just coffee or ice cream. Nathan works a lot of hours these days so anytime together is nice. So we had $20 (a splurge) and it was a toss up between going out for a cheap date or making our own tasty dinner at home. We opted for our at home dinner date of....

 ...fried pickles for appetizer. Not healthy but yummy and ok on occasion.

 Grilled burger with roasted red pepper, spinach, feta, and balsamic drizzle.




Spinach salad with strawberries, feta and blackberry vinaigrette. 

And, of course, Nathans beer. Harpoon Ginger Wheat. I had a taste and it was delicious.

GA Baby Showers

 The week before last I flew down to GA to visit with family and friends before baby House arrives. While I was there I had two baby showers. One in Forsyth and one in Statesboro. Both were amazing and reminded me of how blessed we are to have so many friends and family that love us and our baby.

Unfortunately I did a very poor job of taking pictures of the rest of my week. I made a quick trip to Savannah to visit 2 of my brothers. Micah is doing an internship at a golf course in Hilton Head this summer so we met half way for lunch. So I managed to see 3 out of 5 brothers while I was there.

It was a great trip and super busy. I'm thankful I had the opportunity to visit with everyone. As always it's good to be back home. Now I'm trying to get everything ready in the nursery. Nathan finished the baby bed on Saturday and if we can get the changing table painted we'll be done! I'll post pictures as soon as it's finished.

30 Weeks and Market Square Day

Saturday was Market Square Day in Portsmouth N.H. It's a huge festival of crafts, food, and entertainment that draws in about 60,000-80,000 people for the day. The weather was wonderful so we went to check it out. There were a lot of local crafts and a large amount of the downtown stores had tents. We walked around for a while and then went to Prescott Park which is in downtown Portsmouth.

Busy Saturday

  

So this week strawberries were 99 cent a pound and corn was 12 for $1.99. I couldn't go pick produce for that cheap so I decided I should probably can some of it. Most of the produce here won't be ready until August which is baby arrival time so I'm trying to do as much before then. 

With the corn I decided to make corn relish. I used a recipe that I made in school but this recipe is pretty similar if you're looking for one.

With the strawberries I made the same strawberry rhubarb butter that I made last year. Food In Jars has some great canning recipes and they just came out with a cookbook! Here is the recipe for the butter. 



After all my canning I had to make a dessert for Sunday's fellowship meal. I wanted to do something summery and not chocolate. I found this recipe at Smitten Kitchen and it was delicious! Unfortunately I forgot to take an after picture.
