Coconut Cake


Some of the best recipes that I have I got from my grandmother. I grew up learning how to cook in her kitchen and learned all kinds of great things. The summers were always fun because my grandparents planted a huge garden so there was all kinds of fun things to can. She always made the best salsa and dill pickles. One of my favorite cakes she makes is her coconut cake. It's a really simple recipe but it is so good. I'm always surprised to hear how many people don't like coconut. As soon as I round up enough people to eat a whole cake I'm going to make one.

Coconut Cake

1 (8-ounce) carton sour cream
1 (12-ounce) bag frozen coconut
2 cups granulated sugar
1 white cake mix

Prepare cake mix according to package directions. Bake in 3 layers. Mix sour cream, coconut and sugar until sugar dissolves. Frost cake before the cake has completely cooled. Punch holes in cake so icing will soak in.
